Mudakkathan Dosai


"Mudakathan Keerai"(Balloon Vine plant) is very famous for its use in treating joint pains. We add the mudakathan keerai leaves to regular idli /dosa batter and make dosai out of it to cure joint pain.  Mudakathan keerai also treats all cold and cough related problems. This is a very safe herb that can be used even for treating children's cough & cold. It can also be used to treat ear pain, menstrual cramps, general tiredness and sluggishness. Few drops of the mudakathan keerai leaves juice in the ear will treat ear pain.

 

People who are suffering from arthritis, joint pain and inflammation should try to include this dosai atleast twice or thrice a week in their diet along with external application.

 

Ingredients
Idli/Dosa batter – 3cups
Mudakkathan Keerai – Handful
Green chilli – 2nos
Cumin (seeragam) – 1/2tspn
Salt to taste

Preparation
Wash mudakkathan keerai and grind it along with green chilli and seeragam.  Add this mixture with dosa batter. Add salt to taste. 


Make it as dosa and serve it with Onion kara Chutney. Make it regularly and serve it to children to get its full nutrients and Vitamins.

Rava Idli



Ingredients:-

Rava/sooji  -  1cup
Mustard Seeds - 1tsp
Urad Dal  - 1tsp
Channa Dal/Kadalai paruppu  - 1tsp
Curry leaves  -1string chopped
Grated fresh Ginger - 1tsp
Green Chillies - 4 finely chopped
Corriander leaf - 3tsp chopped
Eno fruit salt / Cooking soda -1tsp
Oil/Ghee  - As required
Curd  - 1cup
Water As required
Cashew nut -10 broken into small pieces
Salt  - To taste

Preparation

Heat 1tsp of Ghee/Oil in a kadai and splutter the mustard seeds, urad dal, Channa Dal, Cashew and Curry leaf.

Add grated ginger and chopped green chilli and fry for a few seconds.

Lower the flame and add rava and fry for 5 mins stirring continuously until the aroma comes.

Transfer the content into a bowl and cool it for 10mins.

Add grated Carrot and steamed green peas. (Optional)

Add in chopped coriander leaf, curd and salt. Gradually add in the water while mixing it gently until the consistency reaches the idli batter. Allow the batter to rest in for 10 mins.

Grease the idli plate with ghee/oil once the idli cooker is ready for steaming.

When you are ready to pour the batter add eno salt/cooking soda to the batter and mix it thoroughly.

Immediately pour the batter into the plate and steam it for 10mins in a medium flame.
Take out the idli plates and allow it to cool for 5 mins then only idli will come out without sticking. Use spoon to remove the idlis from the plate and serve it with hot chutney.
